What's fun about making your quick pickle is how unique you can make your pickle by simply changing your spices.
From the basic dill flavor to the more exotic flavor profile. The following are some common combinations you can use when making a quick pickle.
- Lemon & Thyme: Bright, citrusy, and refreshing. Add lemon zest and a few sprigs of fresh thyme.
- Smoky Chipotle: Deep, smoky, slightly spicy. Add a small dried chipotle chili or a dash of chipotle powder.
- Asian-Inspired: Tangy with a hint of umami. Add slices ginger, garlic, a splash of coconut aminos and sesame seeds
- Sweet & Tangy (Sugar-Free) Mild sweetness balanced with sharp vinegar. Add a few drops of liquid monk fruit or stevia, plus thinly sliced red onion and celery seeds
How To Make A Quick Spicy Pickle
Start by thoroughly washing the cucumbers, then slice them into either spears or rounds, depending on your preference.
Next, prepare the aromatics-thinly slice the jalapeño peppers and onion, and peel the garlic cloves. Set all the vegetables aside while you prepare your jars.
To sterilize the jars, wash the mason jars, lids, and rings in warm, soapy water. Then place them in a large pot of boiling water for about 10 minutes.
Carefully remove them and let them air dry on a clean towel to ensure they’re free from any contaminants that could affect the pickling process.
Making The Brine
Now it’s time to make the brine. In a large saucepan, combine the white vinegar, water, and coarse salt.
Bring the mixture to a boil, then reduce the heat and let it simmer for about 5 minutes, stirring occasionally to make sure the salt fully dissolves.

While the brine is simmering, begin packing the jars. Evenly divide the mustard seeds, dry dill, red pepper flakes, garlic cloves, onion slices, and jalapeño rounds among the jars.
For each jar, use about ½ tablespoon of mustard seeds, ½ tablespoon of dill, ½ teaspoon of red pepper flakes, and one garlic clove.
Once the spices and aromatics are in place, tightly pack the cucumber slices into the jars, leaving about ½ inch of headspace at the top.
Carefully pour the hot brine into each jar, covering the cucumbers completely while maintaining that ½ inch of headspace.
To ensure a good seal and eliminate any trapped air bubbles, use a clean spoon or butter knife to gently run along the inside edge of the jar.
Once filled, wipe the rims, seal the jars with their lids, and allow them to cool to room temperature before storing them in the refrigerator.
You can store your pickle in your refrigerator for up to 2 months.

Learn how to make keto-friendly spicy pickled cucumbers with jalapeños and onions! This easy refrigerator pickle recipe is tangy, crunchy, and perfect for low-carb snacking.
Ingredients
- 2.5 pounds (Kirby or Persian Cucumbers
- 1 large onion sliced thinly.
- 7 jalapeño peppers, deseeded, deveined and sliced thinly
- 7 whole garlic cloves
- 5 cups of water
- 5 cups of white vinegar
- 4 tablespoons of coarse salt
- 3 teaspoons of peppercorns
- 3 teaspoon of coriander seeds
- 2 tablespoons of dry dill
- 2 tablespoons of mustard seeds
- 1 tablespoons of red pepper flakes
Instructions
Prepare the Cucumbers and Vegetables
- Wash the cucumbers thoroughly. Slice them into spears, coins.
- Slice the jalapeños and the white onion into thin rounds.
Sterilize the Jars
- Wash the mason jars, lids, and rings in warm, soapy water.
- Sterilize them by boiling for 10 minutes. Place on a clean towel to air dry.
Make the Brine
- In a large pot, combine the vinegar, water, and pickling salt.

- Pack the cucumbers tightly into the jars, leaving about ½ inch of headspace at the top.
Add the Brine
- Carefully pour the hot brine into each jar, covering the cucumbers completely while maintaining the ½ inch headspace.
- Use a clean spoon or butter knife to release any trapped air bubbles by running it along the inside of the jar.
